Ingredients
• 2 (1 oz) boxes sugar-free pistachio Jell-O pudding mix
• 2 (8 oz) containers sugar-free Cool Whip
• 1/4 of a 20 oz can crushed pineapple, drained (do not use the juice)
• 1 (15 oz) can light fruit cocktail, with juice
• Handful of maraschino cherries
• Extra maraschino cherries and crushed pineapple for garnish
Preparation
1. In a large bowl, combine the pistachio pudding mix, drained crushed pineapple, fruit cocktail with its juice, and maraschino cherries.
2. Gently fold in the Cool Whip until fully combined and fluffy.
3. Top with extra maraschino cherries and a spoonful of crushed pineapple for garnish.
