Grandma Lena’s Mexican Wedding Cakes

Bake 325° for 18-20 minutes

Ingredients

• 1 b Butter
• 1 c Powdered Sugar
• 2 tsp Vanilla Extract
• 4½ c Flour
• ½ tsp Salt
• 1½ c Finely Chopped Pecans

Preparation

• Using a hand-or stand-mixer, mix butter, powdered sugar, vanilla extract, flour, and salt.
• Fold in pecans.
• Use a teaspoon to drop cookies on a parchment lined baking sheet about 1 inch apart.
• Bake at 325°F for about 18-20 minutes.
• While warm, roll cookies in powdered sugar.
• When cool, roll cookies in cookies In powdered sugar once more.
• Store in cookie tins.
